Hi Ness! That will work just fine. You can follow my instructions on how to freeze cookie dough. Just note that sometimes the cookies won’t spread quite as much when frozen, but personally I don’t find that to be an issue at all. πŸ™‚

wow! Thank you for this recipe. These had me looking like a pro chef. So good! I left out the chocolate because I thought that would make them too sweet, but followed everything else exactly. I particularly liked them fresh out the oven after cooling. Do you think if I wanted to assemble the cookie (filling inside the ball of dough, rolled in the sugar cinnamon mix) then stored in the freezer so I could pop a couple at a time in the oven whenever I wanted or had company, it would turn out as good?

I doubled the recipe and it was pretty intense trying to mix all of the ingredients. I ended up using my hands to fold everything together. I did not use as much cream cheese inside of each cookie because it seemed intimidating to completely cover that much. They turned out beautifully!!!! My 10 year old daughter spotted the recipe and insisted that we make them for Thanksgiving….I am so glad that we did!! These are the best cookies that I have ever made!

Hi Eugene! Was your butter warm when you added the sugars? If it was that can cause your sugars to melt and the cookies to spread. πŸ™ The dough also may have needed a little more flour. The 3TBSP of dough and 2 tsps of filling is not too much. πŸ™

These were amazing. I’m a baker and usually don’t need recipes, but I wanted this to turn out perfect so I followed this to a T- the only thing I changed was adding a tiny bit of lime powder to the cream cheese mixture (it tastes like key lime pie on the inside- YUM!), and also added salted caramel chocolate chips to the top along with flaky sea salt after they came out of the oven. It was like a party in my mouth! Delicious and the recipe was perfect. I will be making these for friends and family this thanksgiving and probably Christmas too!

hi there so far the recipes I’ve tried from you have all been amazing so good in fact that I have to keep coming back because people keep asking for more. I actually doubled the recipe so I can have for my house and I occasionally bake stuff for staff members at my dialysis clinic. Also when you say we can freeze the cookies do you mean the cookie dough or the already baked cookies as I have several leftover that I was hoping I could save and by several I mean like half a dozen LOL. I made these using a larger scoop (unintentional but was too lazy to re-scoop with smaller one) for the cream cheese, so I basically made half the number of cookies at twice the size. I had no problem with the dough (it is hard to mix with that much flour, like you said in the video). They are in the oven now and smell delicious! Hoping these giant cookies work!

Hi Serena! I’m so disappointed to hear this! The measurements/proportions listed are correct. Could the flour have been accidentally over-measured (make sure you are not scooping your flour) or could something have been mis-measured, by chance? If you take a peek at the video you can see exactly how the dough looks when I make it in my own kitchen, that might be helpful. All recipes are tested multiple times (a minimum of 3, and that’s not counting the number of times it takes to get the recipe to a point where I’m happy with it and then doing the final tests) in my kitchen by myself and also by others and then they are also made on camera before they make it on the blog, so the proportions are definitely correct and work here. I did a check of the comments here and on YouTube and no one else has run into this issue, either, so I’m really perplexed about what might have gone wrong! Let me know your thoughts, I’d love to help you get this right! πŸ™‚

I thought it seemed like a lot of flour to be adding but thought I’d follow the recipe anyhow. Wayyyyy to much flour. The cookie dough just crumbled and did not come together at all until after I added more liquid and fat and even then the dough had been beaten so much the cookies came out dry and crumbly. Proportions new to be re-evaluated. Disappointed with all the money and time spent on ingredients and trying to make these cookies

Wow! Amazing flavours and compliments from the whole household!
I made halve the recipe as when making the cream cheese mine turned extremely watery in comparison so I wanted a try out batch, just in case. I also didn’t have canned pumpkin and had to make the puree myself (not a super big deal just time consuming) aaaand no light brown sugar, only dark so I was a bit scared them turning out very rich with a gloopy mess in the middle, haha. However, the cream cheese set in the oven and wow how pretty do they look when you cut them in halve! Loving it πŸ™‚
Only downer was halve the recipe ended in just 7 cookies πŸ€·πŸ»β€β™€οΈ
