This was very tasty and easy to make. I must have used more per serving though, because I doubled the recipe for my strawberry shortcake, and still only got about 10 servings! Next time I will try it without the vanilla.

When I make a cheesecake of any kind, I use a piece of plastic wrap then spray it with original Pam Spray and lay it gently on top of the cheesecake. I only dab my finger gently around the outside edges of the cheesecake to keep the air out that way whether it’s a plain cheesecake or one with fruit on top, everything stays moist not dried out from the fridge for at least 5 days. Lol, if it lasts that long!

From past experience I would say that you need to use Clear Jel (not instant Clear Jel) for this recipe. It can be purchased online and is good for pie filling and puddings. It does not break down like regular cornstarch, nor does it cloud up the color. I’ve used it for canning pie filling and many other things. It must be mixed with the sugar.
