Hi Andrea! While it could potentially be doubled, I would recommend making 2 separate batches. Macarons can just be so finicky.

I always hear people say it’s not about the recipe, it’s the technique that makes a great macaron. This is somewhat true. After getting the technique down, I’d try different recipes and methods. I will sometimes bake the Swiss method if I don’t have time to age my egg whites and it would turn out good. However, this recipe that you’ve worked so hard to master is my FAVORITE!!! It really does make the PERFECT macaron! It’s nice and full and the texture is perfect with just the right amount of chew and crispy top! It doesn’t feel like I’m biting into mostly filling. It’s sooooo good! In fact I’m about to bake some now! Thank you again for all the work you’ve done creating the perfect recipe and thanks for sharing!!! The recipe really does make a difference!

I think I under whipped the meringue because they did not dry. the weather was stormy so that could have been part of the problem, but I tried oven drying them and that did little to help. The flavor was alright, they just weren’t fluffy. The earl grey buttercream with them was very tasty though. Will definitely use this recipe again!

Hi Ana! I don’t think there would be any issues cutting the recipe in half. If everything was measured properly, you may have needed to do the macaronage stage a little bit longer, but I’m not sure that was the issue. 20 minutes is a long time. Did you happen to watch the video? That could potentially help solve any issues.

1) Can I halve the recipe to make a smaller batch as I am just starting out and want to try it first?
2) Also, I tried the recipe, but after I mixed the meringue and almond mixture, my batter was thick and sticky, it was not like the smooth and flowing batter in your video. I tried doing the macaronage for almost 20 min but it didnt change, finally i gave up and just made plain cookies instead…. any ideas?

This recipe made the perfect macarons! I’ve often made macarons, but I’m trying to find a foolproof recipe. I thought these wouldn’t turn out since the batter seemed more runny than usual, but the shells turned out beautifully! They also taste amazing when left in the fridge for a few days.

I am on my third batch of this recipe and I think my issues stem from excess moisture. Maybe from overwhipping the egg whites and/or overmixing during macronage, or the 50-60% humidity in my kitchen? Other than aging the egg whites, is there anything else that can help with the excess moisture? My macs are coming out sticking to the silpat with an inside texture as if they are underbaked, but I have baked them the full time and even tried extra time, but that just made them brown on top and they are still sticky underneath. Thanks in advance for any advice 🙂

So glad you enjoyed the recipe, Onnalee! two colors could be tricky, .your best bet would probably be to separate after adding the dry, but it can be tricky considering the macaronage process is so particular. You could certainly go for it, but if you’re not yet super comfortable with the technique and making macarons it might be best to do two separate batches.

I made these and they can it great for a first time. I used your lemon buttercream as a filling, delicious.
I have a question tho. the steps day to add the food coloring before the dry mix is added. How would you go about making two colors. Can you add the dry, separate then add different colors or do you just have to make two batches? I was thinking one half red and one half green for Christmas.
