I was wondering what speed you use tp stir the eggs in to the batter? My electric hand mixer has 5 speeds. Would you do it on 3 or just barely stir it on 1? Are you trying to beat the eggs a little and get air in to the cake?

Loved this easy to prepare spice cake. I made these into cupcakes baked in tulip liners. The cupcakes stuck a bit to the liners but that could be due to the brand of liner, not the recipe. I used a # 16 scoop and got about 26 cupcakes. They were delicious , moist and delightfully spicy. I piped them with your browned butter cream cheese frosting. Perfect compliment to the cupcakes.

One question, if it does work out, do you think the dry ingredients of this recipe would work to replace a dry spice cake mix in a dump cake recipe?

This is the only spice cake recipe I have EVER found that does not sink in the middle. I used 2-8” layers and it was perfect; 9” pans would leave the cake layers pretty thin. I baked it for 35 minutes, but next time I think I’ll check it at 30 minutes to see if it is done. I also used old-fashioned penuche icing (instead of cream cheese icing) and it was outstanding!!

My cake turned out tender and moist; I followed the method as described. I was using 9” cake pans so decreased bake time to 29 min. My only complaint is for me, this one is too sweet. I get leery when I see the sugar amount nearly equal to flour amount. I’ve been baking over 45 years. I went to middle and high school back when home economic courses were almost compulsory. The spice level is good except maybe the ginger; it almost tastes like gingerbread. I may decrease by a hair next time. I still find this a good recipe with a good method.

I had been feeling down because I could not get any peanut butter blossom recipes to work in my favor. The cookies kept coming out flat and crispy instead of soft and chewy. Sooooo, I stopped baking for like a week. I was partly upset because I have never had many issues with baking up until this point, and several online bakers kept harping on weighing certain ingredients, like flour. When you have a limited income like I do, a kitchen scale just isn’t a necessity, so I have always always made sure to measure my flour correctly with measuring cups (I.e. spooning and leveling). But, after several failed bakes back to back, I purchased a kitchen scale as a Christmas gift to myself.

While I don’t know if the scale is exactly what made all the difference (because this cake is just delicious), everything I baked for Christmas was from Sugar Spun Run and they all turned out fantastic.

For this cake, I was in the middle of preparing it for the oven when my nephew was having a cranky fit due to being sleepy. So, I had to instruct my 13 year of sister from the living room to finish the last couple of steps for the batter, and it still turned out beautifully.

While I still believe that baking can be enjoyed and successful without the use of a kitchen scale, if it is a luxury you can afford, it may give you some extra security in ensuring that a baked good turns out in away that you desire.

I use the internet to find recipes all the time, but this is the first time I’ve ever commented or left a rating. I’m a good cook, but I’m not a baker. Especially with cakes. I made this cake today. After eating a piece, I proclaimed, “I am a baker”. This was so simple that it doesn’t prepare you for how delicious this cake is.
