These are delicious, but I made a few modifications. I could not easily roll the dough, so I rolled them into balls (I actually measure at .4 oz) and then used a glass dipped in flour to flatten them. Perfect shape and thickness. I would increase the peppermint extract for a stronger mint flavor. I loved the cake-y texture and the decadent chocolate dip.

Hi Alexis! You can store these in an airtight container at room temp, they’ll keep for about a week that way, or 2 weeks in an airtight container in the fridge 🙂 They could be frozen. I haven’t tried it myself, but it’s possible they could be eaten from frozen, I’m just not sure exactly how firm they will get.

Do you know how how long these store and are good for in the fridge? And if they can be frozen? I’ve heard thin mints taste great coming from the freezer anyways 😄

SUCH a good recipe, they really do taste just like the Girl Scout thin mints but so much better since they’re home made! I use so many recipes from here and they’ve never failed. I was craving a mint dessert and wanted to try this one but was reluctant to because it looked a bit intimidating. I have to say, it was really easy! I followed the recipe and had absolutely. No issues. I even substituted butter for the crisco as I never have any on hand. It came out wonderfully! Thanks again for another great recipe!

I really enjoyed this recipe. The flavor is fantastic! The only thing is I wish the baking time was a little more descriptive. I didn’t have the exact cutter and would have liked to have known what the feel of the cookie should be coming out of the oven. My cookies turned out less crisp than girl scouts so I’m not sure if that’s how this recipe intended them to be.
