Love the chocolate peppermint combo! I’m making these for a Toys for Tots fundraising bake sale at work. I’m going to mix some crushed candy canes & mini chocolate chips and roll the sides in the mixture to coat the filling to add a little extra Christmas to the look. Since I’ll be individually wrapping them, I’m going to have to skip the beautiful drizzle from your presentation. Happy Holidays to you and your family!

Hi Jenn! I’m actually in the process of updating this recipe with a new filling/frosting. While this one would still work, these days for mint frosting I personally like to use either my white chocolate frosting and add a bit of peppermint extract or my classic buttercream frosting with peppermint extract. With these recipes, I’ve found a little goes a long way and I rarely need more than 1/4-1/2 teaspoon of peppermint, but with frosting it’s easy to taste-test and decide to add more if needed. Oh and I do not reduce the vanilla extract, I personally find it complements the peppermint flavor well. I hope that helps!

Hi. Sam! I came to your site looking for a mint frosting recipe that would pair with chocolate cake and I found this. Would the filling recipe work ok as a filling and frosting on a cake?

I suppose I could just make a batch of these and taste test for myself! 😉

These look SO yummy! I am a big fan of mint and chocolate. I can understand why some people don’t like it because if it’s not done properly, mint can taste like toothpaste! But when it’s done right, it’s heavenly…and these look heavenly!! Reminds me of my sister’s chocolate brownies she used to make out of the box, which she’d then serve with mint chip ice cream. Lovely job, Sam!!
