Hi Molly! There’s not really such a thing as a true clear vanilla extract, you’ll only find imitation which is the same as flavor. If I use clear vanilla I usually use McCormick brand, but unless I’m really going for a pure white cake I just use regular pure vanilla extract, which is what I currently use when I make this cake. I hope that helps!

I looked on Amazon and can only find Clear Vanilla Flavor and Clear Imitation Vanilla Extract.
I know “Flavor” is different, but is “Imitation” different also?
And, if I’m not making it… do you buy yours somewhere?

I haven’t measured it out, but I think it would make about 24 cupcakes. You will want to make the recipe the exact same way just bake in a cupcake tin. 🙂

Thank you so much for the response, Sam! Do you know how many cupcakes this recipe would yield? I wouldn’t need to change any of the proportions, correct?

Hi Aleena! You can definitely convert this recipe into cupcakes! Make sure to fill the liners no more than 3/4 of the way full, max. They’ll likely bake for around 17 minutes. 🙂

Do you think I could adjust this recipe to make coconut cupcakes? Could you guide me on how I could do that please? Trying to make them for my son’s 1st birthday!

Plan on making this cake today. Wanted to know if I could make the icing a day earlier and refrigerate overnight?

I added 1/4 teaspoon of salt but the frosting came out very thin.. I’m not sure what went wrong. The cake was good though 😀

I’m so glad you enjoyed it so much, Miriam! It is definitely a different type of frosting, but it’s soooo good! 🙂

OK, so I was a bit skeptical on the frosting without powdered sugar, but you’ve never steered me wrong, s9si tried it. At first it looked curdled, but after beating the heck out of it, it came together and it was so smoothe and silky! Wow! Thanks for a great recipe!

Hi Louise! This should work just fine in a bundt cake although I’m not sure on a bake time. 🙂

Hi Evelyn! I actually do have a video for it. It should show right above the written recipe, but if you have an ad blocker enabled it will stop the video from showing up. Here is the coconut cake on Youtube. I also put most of my videos there in case this happens in the future. 🙂

This is absolutely delightful. My husband loves coconut, so I decided to try it. While I don’t mind the flavor of coconut and love the aroma, the texture of shredded coconut is not to my liking. When I made this, I only used the shredded coconut on half of it. I loved it. This is no surprise because I love all of Sam’s recipes I’ve tried. Additionally, I did not have Crisco, so I used solid coconut oil. It was perfect. I also used the whole milk rather than the coconut milk. It was delicious. Thank you, Sam!

May I ask – is this recipe sturdy enough to hold up in a bundt pan? I have a bit of a bundt pan collection, and I enjoy the simplicity of these types of cakes. Thanks for all your insights:)
